From our farm to your table
Harvesting our honey is a delicate and time-honoured process, rooted in both tradition and our deep respect for nature. It all begins with the symphony of buzzing activity within our hives, where thousands of bees work to gather nectar from the blooming flowers surrounding our farm, guided by their innate knowledge and instincts. Our role in this process is to create an environment that supports and nourishes the bees, allowing them to thrive and produce honey in abundance. This nectar is their lifeblood, which they carefully transport back to the hive, where it undergoes a transformation into a rich, honey.
When the time comes to harvest, we approach the hives with the utmost care and respect. The relationship between the beekeeper and the bees is one of mutual trust—built over time and grounded in our commitment to their well-being. We carefully assess the hive over time, looking for the right moment when the honeycomb frames are filled and the honey has reached its peak of richness and flavour.
We then gently remove the honey-laden frames from the hive, making sure to disturb the bees as little as possible. This part of the process requires patience, precision, and a deep understanding of the bees' behaviour. Every action we take is measured and mindful, ensuring that we harvest only what is needed while leaving enough honey for the bees to sustain themselves through the seasons.
Finally, the honey is extracted, strained, and infused with matcha to create Matcha Bees—a product that not only captures the essence of our bees' hard work but also embodies the care, dedication, and love we pour into every jar.
It’s a process that honors the bees, the environment, and the timeless craft of beekeeping, resulting in a honey that’s as pure and natural as the land it comes from.
